I handle emergencies calmly and then fall completely apart once it's over

This is called delayed stress response. During crises, adrenaline and cortisol suppress emotional processing to enable action. Once the threat has passed and the neurological emergency brakes are released, the emotional processing that was deferred floods in — sometimes accompanied by physical shaking, crying, or exhaustion.
